mini banana nut muffins

Two reasons to make them mini.

1) They only take 13 minutes to bake so you can whip them up quickly for breakfast or a snack.

2) They are perfect for mini hands.



Banana Nut Bread

my adaptation of James Beard's recipe

1-1/2 C. flour
1/2 C. whole wheat flour
1 C. mashed very ripe banana
1/3 C. milk
1 tsp. lemon juice (or vinegar)
1 tsp. baking soda
1/2 C. softened unsalted butter
1 C. sugar
2 eggs
1 tsp. cinnamon
1/2 tsp. salt
1/2 C. walnuts
1/2 C. mini chocolate chips

Preheat oven to 350 degrees and grease pan(s). Mix flour, baking soda and salt in a medium bowl. In a separate bowl cream butter. Add sugar and mix thoroughly. Add eggs & banana. Combine milk and lemon juice in a small bowl. Slowly alternate mixing in flour mixture and milk mixture. Mix until completely incorporated. Add nuts and chocolate chips last. Sprinkle a little sugar on the top before they go in the oven for a sweet extra crunch on top.

Bake until toothpick comes out clean.

Loaf pan ~60 min.
Muffins ~20 min.
Mini muffins ~13 min.

this is too funny!!! i have some seriously over ripe bananas which inwas planning on making banana bread with but this looks so yummy!!! thanks for sharing

So I made these tonight and I have to say the only problem I have is that you never say how many mini muffins it will make or how far to fill the mini muffin tins. I did 24 and clearly should have done 48!

Has anyone tried to freeze these? I don't think we'll eat them all before they spoil.

Lisa, I use the size small Pampered Chef scooper, which is the perfect amount when using a mini muffin pan.

I have never tried to freeze them, as they go quite quickly in my house!

I just made these and they were delicious! So moist. I didn't have any dairy milk and I used almond milk instead. So yummy!
